Captain Dave Underill
The ocean is Captain Dave´s playground and life, having been fortunate to begin sailing Hobie cats as a child and moving on to own monohull yachts and then Lagoon catamarans, which were his homes and livelihoods in the charter world. Dave is an outgoing people person, having worked in the very ´face to face´ profession of Optometry before moving on to captaining charters in amazing destinations including the British Virgin Islands, Puerto Rico, the Turks and Caicos, Mexico, Guatemala and now Belize.
In addition to sailing the azul Belize waters, Dave has some interesting and fun accolades under his belt, including being the co-author of ´The Captain´s Guide to Hurricane Holes of the Caribbean and Bahamas´, completing the Hawaiian Ironman and being named top beach guard lifeguard in Florida. With Captain Dave, you can always be assured of safety, experience, adventure and fun!´
First Mate Ellen Nicholas
Ellen is an island resident of Caye Caulker and a warm and gracious host, chef and 1st mate. Ellen has been in the hospitality industry for many years and brings her passion for gourmet food and elegant service to Belize Sailing Vacations. Ellen is also a health and yoga enthusiast, so if you are looking for ways to work off the delicious cuisine she can certainly assist!

Amazing trip on Island Girl!
Our family of five took a five-night trip with Captain Dave and First Mate/Chef Ellen on Island Girl in early January and we had an absolutely amazing time! When we first boarded I thought we might be stepping all over each other, but the boat has plenty of space and numerous spots to ´get away.´ Captain Dave is very professional, but cool and relaxed at the same time. He took us diving for conch and lobsters, fishing, snorkeling, you name it. There was always something fun to do. And whenever we returned from an adventure, Ellen had an amazing meal, snack or cocktail waiting for us. We knew we were in for a treat when the airport shuttle driver said ´you´re not going to believe what Ellen can do in that tiny galley.´ He was right. We ate some of the most delicious meals we´ve ever eaten! And she was such a joy to be around, always with a smile on her face. Added bonus -- she did yoga with my daughter on the front of the boat in the morning. We saw amazing wildlife and stayed in beautiful anchorages every night. And on nights when the sky was clear, we all went to the front of the boat to sip on drinks, lay on the trampolines, and gaze at the stars. All-in-all, one of the best trips we´ve taken as a family. We´re already discussing a possible return to Belize to set sail with Captain Dave and Ellen again..
Wonderful Family Week On Board
We spent a week onboard the Island Girl with captain Dave and first mate Ellen. Grandma and grandpa, our daughter and son-in-law and two grand daughters age 3 and 6. All I can say is we will be back! We arrived in Belize to less than fantastic weather - but our course was altered to avoid the weather and we could not have been happier. We swam, snorkeled, speared lobster, tried fishing, explored remote islands, and spent many hours enjoying sailing the gorgeous waters. The food was excellent - we enjoyed Belizian dishes, and Ellen was able to please the young palates. Often seemed like we were the only boat in our corner of the world. Patricia helped with our onshore accommodations too - a big plus.
